Ed Dittmar, engineer, inventor, rocket scientist, and, for a time, professor of engineering at Brigham Young University, became aware of the health risk the constant squeezing of pastry bags presents for professional decorators. Though unbeknown to him at the time, many unsuccessful attempts to solve the problem had been made by private and government organizations. He made it his mission to develop a way to alleviate the suffering of professional decorators and the attendant costs to bakeries. After three years of intense development, Dittmar built and demonstrated a suitable system, filed for a patent, field-tested the systems and refined an elastically powered decorating system and it's manufacturing processes into the product now known as the EASY-PIPER.
